Johnny Spillings launched The Penny Bun Bakehouse in Suffolk after an impressive 12-year career honing his skills in some of the UK’s most prestigious kitchens.
His journey took him through Michelin-starred establishments, including time with Peter Gorton at the Horn of Plenty in Devon, the legendary Roux Brothers at The Waterside Inn in Bray, and Heston Blumenthal’s The Fat Duck.
It was during his tenure at Raymond Blanc’s Le Manoir aux Quat’Saisons—working under the world-renowned Chef Patissier Benoit Blin—that Johnny’s true passion for baking and real bread truly ignited. Inspired by classic French techniques and a dedication to quality ingredients, he returned to his Suffolk roots to establish this artisan bakery, focusing on handcrafted loaves and flavorful bakes for the local community.
